I was chatting with a vegetarian friend of mine, and she said something that really stood out to me: Thanksgiving is one of her least favorite holidays, because she can’t touch half the food on the table. It makes for a very awkward situation with her family, and she just doesn’t like it. I decided to compile some delicious vegetarian Thanksgiving recipes, to help out everybody who might be in a similar situation. 4 Awesome Uses for Pumpkin Guts

After carving a pumpkin, don’t toss the gooey guts! Check out what you can do with it, besides throwing it away.

1.Roast Them
Collect your leftover pumpkin seeds, and rinse them off. Boil them for 10 minutes in salt water. Dry the seeds with a paper towel, and spread them on a baking sheet. Lightly drizzle the seeds with olive oil, and sprinkle with salt. Roast them at 325 Fahrenheit for 18 minutes; stir partway through around the 10 minute mark. Enjoy!
